19 Years and Over


This is a night time programme for adults who wish to learn contemporary cooking skills from a professional chef. Mentored by Daniel Akrigg, an award-winning chef with a Michelin background, trained under prestigious chefs including Simon Rogan and Michael Deane. You will study on a Part-time programme; this is a practical course where you will learn healthy food preparation and cooking with embedded theory on cooking principles.

Entry Requirements

For entry onto the programme you will need to commit to four session.

You will also need to demonstrate a passion for cooking.

On receipt of your initial application, you will be invited to attend an admissions interview with a member of the team to discuss the course and demonstrate your suitability for the programme.


During the programme you will study both compulsory and optional units including:

• Maintaining a safe working environment.
• Maintaining food safety.
• Maintaining, handling and cleaning knives.
• Preparation of Healthy meals.
• Healthy cooking techniques and principles


You will be assessed practically within the Whites Chef Academy. You will build a portfolio of evidence and complete practical skills assessments; each unit will have an element of underpinning knowledge completed as the programme progresses. End of unit short answer assessments are used as a summative assessment.

You can exit this course after 4 weeks and achieve a Certificate in Preparation and Cooking Healthy Eating. Or continue into the second course of Vegan Dishes.

Additional information

You will be required to wear non-slip closed toe shoes and dark trousers. A kitchen uniform will be supplied for the duration of the course.
