‘Whites Chef Academy’ with Adam Reid

Great British Menu Winning Chef, Adam Reid will take over as Chef-Patron at the White’s Chef Academy in the new academic year. This is an exclusive programme for aspiring young chefs and catering professionals to learn contemporary cooking and hospitality skills. Mentored by Daniel Akrigg, an award-winning chef with a Michelin background, trained under prestigious chefs including Simon Rogan and Michael Deane. Also mentored by John Parrott who trained at The Savoy Hotel London and worked at Michelin starred Thornbury Castle restaurant, under Kenneth Bell MBE.

You will study on a full-time programme, combining practical work with related theory in food preparation and cooking. On successful completion of the programme, you will go on to a guaranteed apprenticeship in your chosen field.

High quality employers have already been sourced to provide eventual apprenticeships. You will be matched to your eventual employer during your full-time programme and will work with them throughout.

Entry Requirements

For entry onto the programme you will need 4 GCSEs at grade 4 or above including English or Maths at grade 3 or higher.

You will also need to demonstrate a considerable talent and passion for cooking.

On receipt of your initial application, you will be invited to attend an admissions interview with a member of the team to discuss the course and demonstrate your suitability for the programme.

Course Content

During the programme you will study both compulsory and optional units including:

• Maintaining a safe working environment
• Working effectively as part of a hospitality team
• Maintaining food safety
• Maintaining, handling and cleaning knives
• Preparation of meat and poultry
• Soups, stocks and sauces
• Vegetables
• Hot and cold deserts

Assessment

You will be assessed within the Whites Chef Academy restaurant where you will build a portfolio of evidence practically; each unit will have an element of written underpinning knowledge questions which will be electronically completed as the programme progresses.

English and Maths qualifications are assessed through external examination.

Fees: £993.50

Progression

On completion of this course you will be able to apply for apprenticeships and full-time/part-time employment.

You will be required to purchase a kitchen uniform and you will be advised of this and the cost at your admissions interview.

A kitchen uniform will be supplied for the duration of the course.
